Here’s how you can make them at home:

Ingredients:

2-3 large white onions

Falafel

2 cans chickpeas (drained)
1 red onion (minced)
1/2 lemon (juiced)
3 cloves garlic (minced)
1.5 tbsp harissa paste
decent pinch of salt
1 tsp cumin
good pinch pepper
4 tbsp plain flour
small bunch cilantro
small bunch parsley

Batter

1/2 cup plain flour
1 cup soy milk

panko breadcrumbs

Vegetable oil (for frying)

To Serve:

Hummus (your favourite flavour)

Method:

1 Cut the white onions into 1cm thick slices & carefully push out the rings individual rings
2 Lay the rings out on a well oiled baking tray
3 Put all the falafel ingredients in a food processor & whizz them up into a paste
4 Tightly stuff each onion ring with falafel paste & then put them in the freezer until they’re frozen solid (we froze ours overnight)
5 Put the plain flour & soy milk into a mixing bowl & mix it together until there’s no lumps
6 Take the rings out of the the freezer
7 Dip the batter-covered rings in panko breadcrumbs (make sure they’re well covered – that’s how you get a nice crispy crust)
8 put the onion rings in very hot oil & fry them until they’re golden brown & crispy
9 Put the onion rings on some kitchen paper to soak up any excess oil
10 Serve straight away with hummus
